‘For 99.95% of my career I’ve been trying to please other people, making vins d’effort. Now I’m learning how to let things go, but in an enlightened way – to be receptive to conditions from which the wines can emerge and be interesting. If you have that straight and level path, things generally fall into place. If everything is right, the wine makes itself. But you have to be very clever to get there.’
